STARCH AND CELLULOSE OF DIFFERENT KINDS OF RICE IN PRIMORYE

Abstract. The article examines interdependence between the quantitative content of complex carbohydrates - starch and cellulose - and the nutritional value of the grain of six zoned kinds of rice in Primorye. As for edible qualities depending on the content of amylose and cellulose Dolinnyi kind occupies the first place. In relation to other kinds correlation between amylose and cellulose content wasn’t identified.
